Homebrew Cherry Wine Making Recipe
2.5 kg / 5lb Cherries medium wine or 3kg / 6.6 lb Black Cherries Sweet Wine
1kg / 2 lb Sugar
4.5 litres . 1 gallon water
1 tsp Pectolase
Yeast nutrient
Yeast
Wash the cherries do not use any damaged ones
Put the cherries into brewing bucket and crush without breaking the stones
Pour on the boilling water and mash well
When cool add the pectolase, cover, keep warm for next 48 hours, stirring daily
Strain juice onto the sugar, mix well to dissolve the sugar
Add yeast and yeast nutrient leave in a warm place to ferment
When fermentation is complete, siphon into a clean demijohn, leave somewhere cold to clear
When totally clear, bottle, cork and store
