Ginger wine making recipe made from fresh ginger root

100g Root ginger, 300ml white wine concentrate, 1.5 kg sugar, 1kg bananas, 4.5 litres water, yeast, yeast nutrient

Peel and chop the ginger root add to brewing bucket,

Pour on 2.5 litres of boiling water, add sugar mix to dissolve, add white wine concentrate,

Chop bananas into small chunks, boil in 500ml of water until mushy, strain liquid into brewing bucket, mix

Add 560ml cold water to bucket, when liquid is luke warm add yeast and yeast nutrient

Ferment covered in the bucket in a warm place for 10 days, stir daily, strain into demijohn, if necessary top up with tepid water to 1 gallon mark, fit airlock, continue to ferment in a warm place until bubbling stops

Siphon into  clean demijohn, refit airlock and leave in a cold place to clear

Bottle when is clear and store
