How to make ginger beer
Add the yeast and sugar to the bottle using a funnel
Grate ginger and mix with the lemon juice and honey if using.
Using the funnel add this mixture to the bottle
Add water to the bottle until 3/4 of the way full, replace the top and shake the bottle until all the sugar is dissolved.
Top up with water, leaving a 1 inch gap at the top, to allow for production of co2 gas.
Fit the top securely and leave in a warm place for between 24 and 48 hours no longer
When the bottle feels very hard and you can no longer squeeze it your beer should be ready.
Place the bottle in the fridge overnight to stop the yeast working
Strain into a clean bottle using a straining bag or fine sieve and funnel
