Strawberry Wine making Recipe
2 kg/4lb fresh stawberries, yeast, 1,5 kg/3lb sugar, yeast nutrient, 1 teaspoon citric acid, 4.5litres/1 gallon water, pectolase
Wash strawberries and remove stems
Mash strawberries in bucket, add sugar and 2 litres boiling water mix thoroughly to dissolve sugar
When cool about 21 degrees C add pectolase, stir and leave for 24 hours covered in a warm place
Strain liquid off the fruit into a demi john, add a further litre of warm water to the pulp in the bucket, mix well and strain straight away into the demi john
Add citric acid, yeast nutrient and yeast, make up to 4.5 litres/1 gallon with water, fit airlock and continue to ferment in a warm place until hydrometer reading is 1.000 or below
If at this stage the wine is too sweet continue to ferment until required taste
Then syphon wine into brewing bucket and add stabiliser, stirring thoroughly to remove any CO2, leave for 24 - 48 hours stirring regularly
Add finnings A, mix leave for 1 hour, add finings B mix thoroughly, leave in a cold place, covered to clear
When totally clear syphon into clean bottles, cork and store
